در رسالۀ افیونیه حکیم میرعمادالدین محمود شیرازی قهوه را سرد و خشک در درجۀ دوم گفته است.

میرزا قاضی گفته است : که سردی آن به سر حدد ضرر رساندن نمی رسد و بین سردی و خشکی آن تساوی است.
حکیم سالک الدین یزدی گفته است: برودت و سردی آن در اول درجه دوم است و خشکی آن درسوم است. (چرا که افراط آن یبوست دماغ و بی خوابی و خشکی مزاج می آورد.)

شیخ داوود انطاکی می گوید: در اول گرم است و در دوم خشک و شایعه است که سرد و خشک است و ممکن است پوست آن گرم و مغز آن معتدل یا سرد در اول باشد و آنچه که باعث می شود فکر کنیم سرد است عفوصت وگس بودن آن است و تجربه مشخص شده است که جهت خشک گردانیدن رطوبات و سرفه های بلغمی و ادرار و آب ریزش بینی مفید است, که همگی به دلیل گرم خشک بودن است.

در گرمی معتدل و خشکی بر آن غالب است و قشر آن گرم تر و خشک بر از آن است.
حکیم عقیلی خراسانی نیز در مورد مزاج قهوه گفته است: مرکب القوی است. خصوصاً تازه آن . چرا که دارای دو جزءِ می باشد. یکی لطیف گرم و تر ودیگری کثیف سرد وخشک. اگر تازه تر باشد آن جزو اول یعنی گرمی و تری غالب است و اگر کهنه گردد به تدریج کم و زایل می شود.
و اگر قهوه را بریان کنند. گرمی و تری آن زایل می گردد و در نهایت تازۀ آن خصوصاًَ قشر خام آن گرم و خشک است و کهنۀ آن خصوصاً بریان آن سرد و خشک است و هر چه کهنه تر شود و بریان گردد. سردی و خشکی آن بیشتر می شود.

افعال و خواص

نوشیدن آب پختۀ قهوه باز کنندۀ گرفتگی ها است به دلیل آنکه پادزهر است و مسکن دردها و به جریان در آمدن و غلیان خون می گردد و تندی و گزیدگی صفرا و سودا و سوخته شدن آنها را از بین می برد.
علاوه بر آن رقیق کننده و صاف کننده اخلاط است و غلظت آنها را از بین می برد. و بنابر این در تب های دموی و صفرایی و سودایی خصوصاً در ابتدا و پس از حصبه و آبله و ربع مفید است و یرقان را نیز سودمند است .
قهوه ملین طبع است و جاری کنندۀ ادرار و خشک کنندۀ رطوبات است و به جهت سرفه بلغمی و آب ریزش بینی و رفع ماندگی و خستگی مفید است.
قهوه معده را تقویت می کند و انواع سردردها و آماس های چشم (رمد) را از بین می برد. و مانع صعود بخارها به مغز است. بعضی گفته اند قهوه برای بواسیر نیز مفید است.

جوشانده قهوه با عسل

جهت سرفه های گرم و تر استفاده می شود. و سرفۀ بلغمی و آب ریزش ها و رخوت و تنبلی معده را با خشک کردن رطوبات آن و صعود بخارات آن به دماغ التیام می بخشد.

نیم بریان کردن قهوه

اسهال و پرخوابی و تشنگی و صبر بر بی خوابی و تشنگی درمان می کند بدون آنکه آزاری به شخص برسد و طبعش دگرگون شود در ضمن ماندگی ، رخوت و سستی در سفرها و حرکات و کارهای سخت را از بین می برد.

مضرات قهوه

گفته اند سردرد می آورد، لاغر می کند و باعث بیداری و زرد شدن چهره و کم شدن قدرت باه می گردد.منی را کاهش می دهد و خفقان قولنج ، نفخ، مالیخولیا، کابوس می آوردو دستگاه تنفس را خشک می کند.
در ضمن بواسیر آورده و بارد المزاجان (سرد مزاجان) که اخلاط فاسده در آنها غلبه دارد برایشان بسیار مضر است.
